Spring is officially here...I feel like I can say that, right? I mean the sun is out and everywhere you look people are smiling...Spring feels for sure.
One of my fave hearty (but, light) Spring dishes, that go well for both lunch and dinner, Tuna Poke Bowl.  Here's a quick 101 on making the perfect Poke Bowl...
I like to buy my Tuna fresh from my local Fishmonger, I cut into bite size cubes and set aside.  Tip - if you don't have a fave Fishmonger or your local grocery store doesn't have any fresh Tuna, you can always pop into your local Sushi spot and purchase Tuna Sashimi and dice it up.
I then prep my marinade and allow the Tuna to soak in the sauce for at least 30 mins in the fridge.  Find below my fave 3 Tuna marinades:

Now for the bowl! The ideas are endless to make your perfect Poke Bowl, but, here are a few I love, that are super simple to make, and "oh so" yummy to eat!
 Option 1 - Dice up 2 Avocados and place at the bottom of a bowl, place your Poke atop, with Scallions and Sesame Seeds
Option 2 - Boil 1/2 Cup of Rice and place at the bottom of a bowl, place your Poke atop, with Scallions and Sesame Seeds - go for the Spicy Mayo Poke with the rice option
Option 3 - Place some spinach at the base of your bowl, add the following to the sides of the bowl; shredded Carrots, shredded Red Cabbage, pickled Cucumbers, sliced Radishes, sliced Avocado and Pea Shoots, place your Poke atop with Scallions and Sesame Seeds - Viola!
Tip - Looking for a yummy appie for friends?! Make your fave Poke and pair with crispy Tempura or your fave water thin light crackers- nom nom
Prep anyone of the above the night before for a perfect lunch time snack at work or mouth watering dinner dish!
